Bean Quesadillas Recipe

Veggies, beans, and cheese sandwiched between two tortillas then heated in oil until golden on both sides.

Ingredients
  • 1 tablespoon vegetable oil
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and
  • drained
  • 1 green bell pepper, chopped
  • 2 tomatoes, chopped
  • 1/2 (10 ounce) package frozen corn
  • 12 (12 inch) flour tortillas
  • 1 cup shredded Cheddar cheese
  • 1/4 cup vegetable oil
Directions
  1. 1.Heat 1 tablespoon oil in a skillet over medium heat, and saute the onion and garlic until soft. Mix in beans, bell pepper, tomatoes, and corn; cook until heated through.
  2. 2.Spread 6 tortillas with equal amounts of the bean and vegetable mixture. Sprinkle with equal amounts of the Cheddar cheese, and top with the remaining tortillas to form quesadillas.
  3. 3.Heat 1/4 cup oil in a large skillet over medium-high heat. Place quesadillas in the skillet and cook, turning once, until cheese is melted and both sides are lightly browned.

Turkey, Mint and Spinach Salad

Fresh orange juice, mint, apple and grapes make this turkey salad something special. This recipe is perfect to use leftover roasted turkey from your holiday meal, or even leftover chicken. Be sure to use organic ingredients to get the most flavor and nutrients. Servings: 4

Here’s what you need:

  • 2 cups shredded roasted turkey
  • 1 organic apple, chopped
  • 2 organic celery stalks, chopped
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 cup organic, red grapes, halved
  • 4 cups baby spinach

Dressing

  • 1/4 cup olive oil
  • 1/4 cup fresh squeezed orange juice
  • 1 Tablespoon orange zest
  • Stevia to taste
  • 1 Tablespoon Dijon mustard
  • dash of salt and pepper
  1. In a small bowl whisk the olive oil, orange juice, orange zest, stevia, Dijon, salt and pepper.
  2. In a medium bowl combine the turkey, apple, celery, mint and grapes. Toss with the dressing.
  3. Prepare each plate with a pile of spinach. Top with the turkey salad mixture.

Local Food Pantries Are Running Low

We hope that all of you are finding your lives returning to normal since Hurricane Sandy and its aftermath.
However, we know that many in our community are still struggling and as a result local food pantries are running very low on food.
To help meet the need for our local families, Maplewood Boot Camp is a dropoff point for food items at all camps Nov 12th-17th.
And in exchange for bringing food, everyone who donates can enjoy a free workout on us.
All donated food will be delivered to St. Joseph’s Food Pantry, 245 Hilton Avenue in Maplewood.
Any and all non-perishable food items are desperately needed (except for beans). Suggestions include pasta, tomato sauce,
peanut butter, tuna, bread, mac and cheese, soup, rice, crackers, juice boxes, milk boxes, cereal, fruit cups, granola bars, pretzels, nuts, etc.
Maplewood Boot Camps are held
6 am Monday, Wednesday and Friday in Memorial Park in Maplewood
9:30 am Tuesday, Thursday and Friday at the Baird Center in South Orange (in the batting cages behind the Baird)
7 pm Monday and Wednesday in Memorial Park in Maplewood
8 am Saturday in Memorial Park in Maplewood

Donations will be collected from Monday, November 12th through Saturday, November 17th.
